Natural Strawberry icecream

One fine morning, when I was giving breakfast to my little one, he came to me and sat on my lap and very sheepishly asked me “mumma, summers have come, can you make strawberry icecream?” I was skeptical before promising anything as firstly I had never made ice creams before and secondly icecream means loads of whipped cream and I am not an advocator of adding creamy stuff in my kids diet. So I challenged myself and promised him that his icecream will be ready tomorrow. So I did some research and finally got myself ready to prepare this amazing recipe without cream or condensed milk or any other artificial flavours. Ingredients Strawberry - 200gm Milk - 500 ml Custard powder (preferably strawberry favour but vanilla will also be fine)- 4 tbsp Sugar - 4 tbsp Method 1. Wash the strawberries thoroughly and cut the stems. Now place them in a zip pouch and freeze them. Leave it overnight. This step is very important so don’t skip otherwise your icecream will not have a nice texture. 2. Boil milk and reduce it until it becomes 350 ml approximately. Keep stirring at regular interval during this stage. Add sugar and give it a boil. 3. In a separate bowl, mix custard powder with 2tbsp of cold milk. 4. Pour this mixture into the milk. Keep stirring until the mixture thickens.Let it cool. 5. Now it’s the time to take our frozen strawberries and blend them in a blender. This step takes time so please be patient and blend it into a smooth and thick purée. Don’t add any water. 6. Now mix this purée and milk mixture. Blend this mixture using a hand blender at maximum speed for around 10 minutes. 7. Pour the mixture in any container and cover it with aluminium foil and close the lid. This will avoid ice crystals in the ice cream. Freeze it for 6-7 hours. When I served this ice cream to my kids, they loved it. The smile on their faces while eating this ice cream was priceless and I was so happy that I took this challenge of making a completely natural and preservative free ice cream without cream and condensed milk. And, after feeling content with the strawberry icecream my naughty little one comes and says “ After this ice cream gets finished, can you make chocolate chip ice cream for me!”. I am like what??
